BLT Prime @ NYC ***
Just as guests approaching the hostess station are greeted with the ethereal aroma of the apples lining the vestibule at David Bouley’s eponymous restaurant, so too are patrons at Laurent Tourundel’s BLT Prime olfactorily arrested by the overpowering odor of flesh emanating from the beef dry-aging in the plexiglass meat locker that serves as the restaurant’s visceral but effective centerpiece.
While some might have labelled me as a bit of steak fiend when I was a child, nowadays I am drawn to slow-cooked meats in their myriad mouth-watering varieties. I try not to over-order and therefore don’t usually have to request for remainders as take-out, but as my colleague Lauren and I discovered as a result of the inevitable superabundance of the steakhouse, even better than Braised Short Ribs served in a cast iron skillet on Tuesday night is Braised Short Ribs heated in the office microwave on Wednesday afternoon and conspiratorily consumed at a desk-cum-dining-table while the scent of BBQ sauce drifts tantalizingly fom cubicle to cubicle.
